Five easy budget-friendly picnic recipes now it’s finally warm outside

SNACK ATTACK: Swap store-bought Dairylea Lunchables for DIY lunchbox snacks.

Chop up Valley Spire mature cheese, £2.99, and Birchwood ham, £1.89, from Lidl, and arrange them in tubs with a pack of Rivercote savoury crackers, 99p. This will make enough snack packs for six people.

EGG ESSENTIAL: A Scotch egg is a picnic classic that is easy to make and tastier than store-bought. Soft boil some eggs and use the sausage meat from a pack of £1.50 sausages from Tesco.

Blend the stale ends of a loaf for the breadcrumb coating. Wrap each boiled egg in sausage meat, roll them in breadcrumbs, and bake for 25 minutes in a hot oven until golden brown.

ROLL WITH IT: For an effortless yet impressive picnic snack, use Asda’s ready-roll pastry, £1.25, to create veggie pinwheels.

Unroll the pastry and spread it with any leftover cooked veg and a light grating of cheese.

Roll the pastry back up and cut it into 1cm slices. Spread flat on a baking tray and cook for around ten minutes in a hot oven until golden brown.

COOL AS A CUCUMBER: Swap soggy tuna and cucumber sandwiches for simple, cheap tuna and cucumber rolls.

You will need a tin of tuna, 55p, and a whole cucumber, 89p, from Aldi, along with a dash of mayonnaise from the fridge. Create long, flat strips of cucumber using a peeler.

Mix the tuna with the mayo in a bowl. Lay the cucumber strips on a flat surface, add a spoonful of the tuna mix, and roll them up for bite-sized picnic snacks.

TAKE A DIP: Get a tin of cannellini beans, 59p, Morrisons, and turn it into a delicious bean dip.

Simply blend the beans with a clove of minced garlic, lemon juice and olive oil, which you might already have in the cupboard.
